The perfect summer dish that you can throw on the stove or in your slow cooker overnight before bed, or early morning and go about your day would be barbacoa. barbacoa is slow roasted for about eight to nine hours on low- then forked into pieces (will literally fall apart with little to no effort) into a burrito, a burrito bowl or street tacos (my personal favorite). i've used barbacoa in my meal prep regime because it can be prepared so many different ways.
I've decided to publish my personal recipe with a twist, that will make you want to cook this dish at least three times a month. Ingredients: 1 chuck roast beef ( the bigger the better, the more marble fat the more tender and flavorful) 2 teaspoon vegetable oil or canola oil 1 can of chile in adobo sauce (about 4 chiles and 2 teaspoons of the sauce from can) 1/2 habanero pepper (chopped) 2 teaspoons of chicken flavor 4 1/2 cups of chicken broth or beef broth 4 cloves of garlic (chopped) 4 teaspoons cumin 3 teaspoons oregano 2 teaspoon garlic salt 2 teaspoon hımılayan salt 3 teaspoon black pepper juice from 4 limes 1. chop your chuck roast into sections... eight sections. doesn't have to be super small its just for easy transfer. 2. heat skillet to medium-high heat with canola oil in the pan. once heated sear each piece of beef for 3 minutes on each side 3. while you're searing your meat, you're going to take your remaining ingredients and add them to a food processor or a blender. blend well and transfer to your pot (turn on low (temp- 2) or your slow cooker (turn on low). 4. after you sear your meat, transfer to the pot and let cook for 8 hours. check on the seasonings as the time goes by. over time i usually add some more garlic salt, pepper or garlic powder for taste. 5. when all done, piece apart with fork and serve. serve options/suggestions: street tacos: corn tortilla, salsa, barbacoa and lime. burrito bowl: rice, corn, black beans or pinto beans, barbacoa, gaur, sour cream salsa and lettuce burrito: large flour tortilla, rice, corn, black beans or pinto beans, barbacoa, gaur, sour cream salsa and lettuce.
